Because, if you ask me, there isn’t anything better than a cute ol’ rabbit butt sticking out of your Easter cupcake. While it’s not quite as elegant as any of the recipes from my Easter Dessert Goals post (here!), I still can’t help but love them all the same. With Easter just days away, we’re faced with crunch time here so if you need to purchase the vanilla cupcakes yourself and tuck the cotton candy and almond details on top, I promise I won’t tell.
Mix together the icing sugar, water and red food colouring. Pour into a piping bag (or a sandwich bag with a teeny tiny hole cut out of the corner). Pipe little pink circles onto each jordan almond (a bigger circle for the "pad" of the foot, and three tiny circles for the "toes"). If you find your icing is too runny/not holding its shape, simply add a little more icing sugar until it holds. Let feet dry completely, 20 minutes or so.
Once dry, place two feet on top of each cupcake, grab a chunk of cotton candy, gently roll it into a ball and place it on top.
Notes
You need to serve these bad boys right away, otherwise the cotton candy melts. If you need a bit more staying power consider making the bunny tails out of fondant and rolling it in shredded coconut!
