World’s Best Spinach Dip (with bacon!)

A recipe for the world's best bacon & spinach dip  

As far as I’m concerned, everyone needs to master three things in the kitchen: perfect, fluffy scrambled eggs, grandma’s chocolate chip cookies, and a really amazing spinach dip. It pretty much covers all the necessary basics, no matter your skill set. When it comes down to it, I don’t think that there’s anyone in the world who doesn’t love a solid dip pre-dinner. Fig and goat cheese crostinis are all well and good, but unfortunately not everyone is a fan (I know, I judge as well). Spinach dip makes for the perfect solution when you’re looking to whip up an appetizer that will please an entire crowd. My friend recently introduced me to her go-to version, and it’s omg amazing. Like lick-the-bowl-clean type good. The secret: crispy bacon! (I feel like this is the secret to a lot of dishes. Side note.)

Ingredients
  1. 125g cream cheese
  2. ½ cup mayonnaise
  3. ½ cup plain yogurt
  4. 300g frozen chopped spinach, thawed, excess water squeezed out
  5. 2 green onions, finely chopped
  6. 2 garlic cloves, minced
  7. 4-6 slices cooked crispy bacon, finely chopped
  8. Salt and pepper, to taste
  9. 1/2 a lemon, juiced
Instructions
  1. In a bowl, mix together cream cheese, mayonaise and yogurt.
  2. Add in spinach, onions and garlic and mix well
  3. Toss in bacon (reserve a small handful to sprinkle on top) salt & pepper, and lemon. Mix.
  4. Sprinkle bacon on top and let sit for 30 minutes, refrigerated, so that all the flavours get absorbed.
  5. Serve alongside mini pitas and veggies of your choice!
