Beetroot Rose Lattes

You know when you meet someone and you automatically feel like you’ve been friends for the entirety of your life? That’s what happened to me the minute I met Kaylee. She’s a woman after my own heart – she has talent seeping out of her pores – and I’m so excited to have her on board here at L&L headquarters. Kaylee here from the Blondielocks, a lifestyle blog inspiring you to “curate a life that is juuust right.” I’ve been a long time follower of Jacquelyn’s blog so to say that I am excited to be able to share a monthly post here is an understatement and I am so grateful to Jacquelyn for allowing me to do so!

Valentine’s Day is just around the corner (can you believe it!?) and I admittedly love all things love…and pink! Typically, I am all about the sweets when it comes to Valentine’s Day. Cookies, chocolate, candy, you name it and I enjoy it. However, this year, I wanted to change things up a bit and challenge myself to make something healthy and V-Day approved. I’ve noticed beetroot lattés popping up at local cafés and been so intrigued by them. Though, to be honest, I was sceptical that beets could actually taste good in latte format. Skepticism aside, I decided to go forth (go froth?) and whip up a batch and guess what? After making these pretty pink drinks myself I can completely see why they’re all the rage. When made with homemade almond milk, these lattés are sweet, frothy, subtly floral and absolutely delicious. Happy (healthy) Valentine’s Day!

Ingredients
  1. 1 cup homemade or store bought almond milk (or enough milk to fill your mug), reserve 1 tbsp.
  2. 1 tsp beetroot powder
  3. ¼ tsp rosewater
Instructions
  1. In your mug, add beetroot powder and 1 tbsp. of almond milk and mix together.
  2. Heat the remaining almond milk and rosewater in a small saucepan, gently whisking frequently. Do not bring the milk to a boil.
  3. Once your milk is heated, froth up your almond milk with a milk frother.
  4. Gently pour frothed milk into your mug, this will create the marbled pink/white effect.
  5. Give the latte a little mix with a spoon before you drink it and top with dried rose petals if desired.
