Dark Chocolate Almond Banana Popsicles

While I haven’t been enrolled in school for over a decade now (yikes!!), in my mind Labour day weekend will always and forever mark a new beginning. A fresh start, and a new year, if you will. And while we’re technically still a few weeks away from fall, I’m starting to feel that all too familiar back-to-school, fall-like feels, beginning to creep in. The mornings are crisp, the tea consumption is high, and I’m admittedly getting excited at the whole ordeal. But before I get too ahead of myself, I wanted to step back and create a few more recipes that have been on my summer to-do list. And these dark chocolate banana popsicles, complete with toasted almonds and a light sprinkling of sea salt, have been high on said list for months. Let me be the first to tell you that they most certainly do not disappoint.

Ingredients
  1. 4 large ripe bananas
  2. 1 cup coconut yogurt
  3. 2 tbs pure maple syrup
  4. 1½ tsp pure vanilla extract
  5. 90g dark chocolate, melted
  6. ¼ cup roasted almonds, roughly chopped
  7. 1 tsp fleur de sel
Instructions
  1. Place the bananas, yogurt, maple syrup, and vanilla in blender and blend until smooth. Pour into popsicle moulds and freeze until firm, 6 hours or so.
  2. Once frozen, remove from mould, place on parchment paper and drizzle with melted chocolate. Top immediately with almonds and flaked sea salt before the chocolate has time to cool!
  3. Place popsicles back in freezer to set for a few minutes and then enjoy
