I always joke that the best part about being in my thirties is the fact that I am now completely unapologetic about my home body status. And while I much prefer to hang out at home, cozied up in blankets with my nearest and dearest, over painting the town red, I have to admit that I still take my cocktail game seriously. And rightly so if I want our home to be in the running for Toronto’s latest hot spot – sweatpants and all. I recently whipped up this sparkling plum cocktail for a few girlfriends and I, and I think it may be my new favourite. Subtly sweet, and innately pretty, it’s the perfect thing to sip on while catching up with your people.
In a small saucepan, add all of your ingredients. Bring to a boil on medium-high heat, then reduce to simmer. Simmer for 10-15 minutes, until mixture thickens and plums break down.
Strain through fine mesh strainer
(Note: you can reserve the pulp of the plums - it tastes exceptional on vanilla ice cream
FOR THE COCKTAIL
In a lowball glass over ice, add simple syrup, aperol and a squeeze of lemon juice. Stir and top with your favourite proseco or sparkling wine
