Coconut Chocolate Chip Cookies

I know it’s absurd to have sentimental feelings that revolve around a baked good, but when it comes to chocolate chip cookies I simply can’t help it. They remind me of baking with my grandmother before I could even speak. Or those late nights in my early twenties, both my roommate and I eating our feelings, and bonding over our love for a fresh-from-the-oven batch. They feel like home and loved all wrapped into one delectable little bite, and I find the whole process soothing from start to finish. Needless to say, I never go long without making a batch*. And while I typically don’t mess with a good thing, on my most recent cookie making endeavour, I thought I’d experiment with a little bit of coconut. The results? Well, let’s just say they barely lasted 24 hours before being devoured entirely. Ingredients
  1. 1 cup unsalted room temperature butter
  2. 1 cup brown sugar
  3. 1 cup white sugar
  4. 2 large room temperature eggs
  5. 2 tsp. vanilla extract
  6. 2 1/2 cup all purpose flour
  7. 1 tsp. salt
  8. 1 tsp. baking soda
  9. 1 tsp. baking powder
  10. 1 cup Chocolate Chips
  11. 1 cup unsweetened shredded coconut
Instructions
  1. Cream together the butter, brown sugar and room temperature until smooth. Stir in the egg and vanilla.
  2. In a separate bowl, stir together the flour, salt, baking soda and baking powder. Pour into sugar mixture and mix until just incorporated.
  3. Stir in the chocolate chips and shredded coconut. Cover the dough with plastic wrap and refrigerate for two hours, or overnight.
  4. Preheat your oven to 350 degrees.
  5. Create golfball sized balls of dough. Place on cookie sheet, 2" apart. Bake for 9-10 minutes until edges are golden brown.
  6. Remove from baking sheet and let cool on wire rack.

*Tip: make the dough, divide it in two, put one half wrapped in the freezer, and bake the other half. Cookies for now, cookies for later. Future you will thank yourself.

  1. I can never resist a chocolate chip cookie either as I have the same nostalgic feelings! Sweets are my weakness, but a chocolate chip cookie is the ultimate. And these cookies look like they could definitely make me weak in the knees!

    Baking is always a bit sentimental for me, the big one is christmas cake because it’s such a tradition for me and my mum. I’ve recently been on a big coconut kick and these sound delicious!
