I know it’s absurd to have sentimental feelings that revolve around a baked good, but when it comes to chocolate chip cookies I simply can’t help it. They remind me of baking with my grandmother before I could even speak. Or those late nights in my early twenties, both my roommate and I eating our feelings, and bonding over our love for a fresh-from-the-oven batch. They feel like home and loved all wrapped into one delectable little bite, and I find the whole process soothing from start to finish. Needless to say, I never go long without making a batch*. And while I typically don’t mess with a good thing, on my most recent cookie making endeavour, I thought I’d experiment with a little bit of coconut. The results? Well, let’s just say they barely lasted 24 hours before being devoured entirely. Dangerously delicious.
