Some time ago I attended the sweetest shower for a good friend, and while every single detail was on point, they were serving a thyme and plum champagne cocktail that totally stole the show. I made the mistake of not asking for the recipe, and I’ve been pulling a Monica Gellar in an attempt to recreate it myself ever since. I’m thrilled to announce that I’ve come incredibly close to perfecting it, and would be doing you all a disservice if I didn’t share. A thyme simple syrup with muddled plums sets the stage, while a heavy hand of prosecco seals the deal.

FOR THE SIMPLE SYRUP
Bring the sugar, water and thyme to a boil over medium heat. Stir until sugar is dissolved. Set aside until completely cooled. Strain into tupperware or a mason jar and store in the fridge. Can be made up to a week ahead.
FOR THE COCKTAIL
In an empty cocktail shaker add the simple syrup, thyme and plum slices and muddle together for a minute or two. Add ice and shake vigorously. Pour evenly into two lowball glasses over ice. Top with champagne and garnish with additional thyme sprigs and plum slices.
