With our schedules being busier than ever these days, Justin and I have admittedly been relying heavily on take-out to fuel us. And while the lack of grocery runs, dishes to clean and the like has been lovely, I can’t deny that I’ve been feeling draggy as a result. I mean, there’s only so much take-out Thai one can ingest before her pants don’t fit. The crazy thing is, I already know that with a little planning whipping up a quick healthy meal doesn’t need to be difficult. So I set some time aside last weekend to research a few flavourful weeknight dishes and unearthed a TON of mouth-watering options. I legitimately could create an entire series out of this, but to start here are 6 salad recipes I’m just dying to try.
