Ingredients
  1. 1/2 cup + 2 Tbsp. brown rice flour
  2. 1/4 cup sweet white sorghum flour
  3. 2 Tbsp. cornstarch
  4. 1 tsp. baking powder
  5. 1tsp. xanthan gum
  6. pinch of salt
  7. 1/4 cup unsalted butter, softened
  8. 1/2 cup packed brown sugar
  9. 1 heaping Tbsp. creamy peanut butter
  10. 1 egg
  11. 1 tsp vanilla
  12. 150g roughly chopped white chocolate
Instructions
  1. Preheat oven to 375 F
  2. In a medium bowl mix flours, cornstarch, baking soda, xanthan gum and salt.
  3. In a separate large bowl, beat softened butter to smooth then add brown sugar and cream together.
  4. Add egg, peanut butter and vanilla. Mix well.
  5. Add flour mixture and mix until dough is well combined.
  6. Fold in white chocolate chunks.
  7. Form 2" balls of cookie dough on un-greased cookie sheet and bake 9-10 minutes. Let cool for 15 minutes on wire rack.
