Clearly I’m not QUITE done with summer yet. And why should I be when the weather has finally started to oblige (where were you all summer, warmth? I ask you this!) Fresh peaches are still abundant for a few more weeks, and if you make anything this September, these peaches and cream popsicles should be it. They’re so delicious I almost didn’t even want to tell Justin I made them. It’s alright though. He learnt years ago that sharing food is not my strong suit.

Peaches and Cream Popsicles

Serves 10
Creamy and delicious, these popsicles will give anyone a run for their money!
4 cups (around 4 medium) ripe peaches, peeled and sliced
1/2 cup whipping cream, chilled
1/4 cup vanilla greek yogurt
Instructions
In a medium saucepan over medium heat, add sugar, water, vanilla and sliced peaches. Bring to a boil and let boil for 5 minutes. Remove from heat, let cool.
Once cool, place in food processor and pulse until pureed. Pour through a fine sieve to remove any pulp.
Mix in whipping cream and greek yogurt.
Distribute evenly into 10 popsicle molds and freeze 3-4 hours, until solid.
