Frozen chocolate cheesecake (aka the most delicious thing you'll ever eat)

This frozen chocolate cheesecake right here? It’s my kryptonite. Ask anyone. You cannot leave me alone in a room with it as I will devour the ENTIRE thing. This is the cake that my mom whips up for me every year for my birthday, without fail. If I’m being totally honest, she actually makes two. One to share with whomever is at the table when the candles are blown out, and one for me to take home and hoard for myself (I’m not even the slightest bit ashamed, and I very rarely share the second). Up until recently, I never asked her for the recipe for two reasons. Number one: for the sake of my health, I should not be in possession of this knowledge. And number two, saving it for my birthday, and my birthday only, ensures that it remains special. That said, I’ve wanted to share it with you guys for a while now because it’s that. damn. good. And now that I know how easy it is, things are about to get interesting.

Ingredients
  1. 1 3/4 cups of chocolate wafer crumbs
  2. 1/3 cup melted butter
  3. 1-8 ounce package cream cheese
  4. 1 can condensed milk
  5. 2/3 cup of chocolate syrup
  6. 1 tsp. hot water
  7. 2 Tbsp. of instant coffee
  8. 250 ml whipping cream, whipped
Instructions
  1. 1. Mix together the melted butter and cookie crumbs.
  2. 2. Reserve 1/4 cup of the mixture, and press the rest into the bottom of a spring form pan. Place in freezer.
  3. 3. Using an electric beater, beat the cream cheese until fluffy. Add the condensed milk and chocolate syrup.
  4. 4. Mix together the hot water and instant coffee until dissolved, and then add it to the cream cheese mixture.
  5. 5. Fold in your whipped cream.
  6. 6. Pour it into your springform pan & sprinkled with reserved cookie crumbs.
  7. 7. Freeze for 6 hours and enjoy!
