Ingredients
  1. 1 large pineapple
  2. 1/4 cup of shredded coconut (for garnish)
  3. 1 large orange (for ¼ cup of freshly squeezed orange juice)
  4. ¼ cup of coconut rum
  5. 1 – 2 shots of dark rum
Instructions
  1. Cut off the top of your pineapple (about two inches from the top) and set aside. Cut a circle around the inside of your pineapple, leaving about half an inch between your circle and the outside of the pineapple. Use an ice cream scoop or a large spoon & scoop out the inside, setting aside the excess pineapple.
  2. PROTIP:Depending on how ripe your pineapple is it can be difficult to scoop out. If it is a little tough, cut your circle into 6 slices to get some leverage for your scoops.
  3. Blend about a half a cup of pineapple scoops until it’s a nice puree.
  4. Add the ½ cup of pineapple puree, 1/4 cup of freshly squeezed orange juice, and rums into a cocktail shaker & shake for about 15-20 seconds.
  5. Fill your pineapple cup with a handful of ice, strain cocktail shaker into pineapple cup, & garnish with some coconut flakes. 6.Serve, sip, repeat!
