In my humble opinion, there are very few things less satisfying than a well-crafted beverage. With or without alcohol, I don’t discriminate; so long as it’s packed full of flavour, I’m all in. And this recipe for raspberry rose lemonade is of no exception. It’s sweet and tart in all the right places, giving you that smooth flavour with just the slightest pucker. Plus, it may just be the most beautiful bevvy in all the land (if I do say so myself). While this particular version is non-alcoholic, I will admit that I’m tempted to top up my next batch with some prosecco, or pour a few tablespoons into a cocktail shaker filled with vodka and ice.

Serves 6
Sweet and tart in all the right places. It's sunshine in a glass!
1 cup freshly squeezed lemon juice (from 6-7 lemons)
2 tbsp. rose water
Instructions
In a medium saucepan, bring the raspberries, 1 1/2 cups water and sugar to a boil. Turn to low and let simmer for 20 minutes. Set aside to cool completely
In the meantime, juice your lemons and pour into your pitcher.
Once your raspberry mixture is cooled, pour it into your blender and pulse until pureed. Pour through a fine mesh sieve to remove any seeds. Then, pour your strained puree into your pitcher.
Top with 1 1/2 cups cold water, 2 tbsp. rose water, stir and serve over ice!
