Now that things have slowed down significantly, after what can only be described as the best summer of my life mind you, I’ve been finding myself with ample more time to putter around the kitchen. And you guys, I’m kind of loving it. It’s still warm up here in Toronto, but the days are getting shorter, the mornings crisper, and with just the slightest hint of fall in the air I’ve already found myself cooking soups and stews and all sorts of comfort food. But my favourite fall time recipe? This cardamom apple bread. It’s fall in food format and you’re going to want to double your recipe for sure (you’ve been warned).
2 Gala apples, one thinly sliced and one peeled & finely chopped
Cinnamon sugar topping
2 tbsp granulated sugar
1 tbsp cinnamon
Instructions
Preheat oven to 350°F.
Spray a loaf pan with baking spray. For easy removal of the loaf, you can line the bottom and sides with strips of parchment paper and spray again.
In a medium bowl, whisk together baking powder, salt, and flour, then set aside. In a small bowl, mix together cinnamon and sugar for topping.
Use a stand mixer to beat together butter, sugars, and cardamom. Add in eggs and vanilla and mix until smooth, scraping the sides when necessary.
With the mixer on low, alternate adding in flour mixture and milk and mix until just combined. Mix in the finely chopped apple pieces.
Pour the batter into the pan, and top with a line of apple slices down the center.
Sprinkle on cinnamon sugar mixture for topping.
Bake for 50-55 minutes until the bread is golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
