When I was little, one of my very favourite desserts was my dad’s rootbeer float. Though it’s been a while since I’ve indulged in one, to this day that classic dessert still ranks high atop my list. Now that I’m older, I thought I’d give that tasty treat a bit of a grown up twist. Enter: the blackberry vanilla cocktail float. A little homemade blackberry syrup mixed with a scoop of vanilla bean ice cream topped with a shot of something sinful? It truly doesn’t get any better.

Ingredients
  1. 2 cups Blackberries
  2. 1/2 cup Sugar
  3. 1/4 cup Water
  4. 4 cups Club Soda
  5. Vanilla Ice Cream
  6. Gin (or vanilla vodka)
  7. Rosemary and extra blackberries, for garnish
Instructions
  1. In a large saucepan, bring berries, sugar and water to a boil, stirring occasionally. Let cook for 10-15 minutes until juices are released. Press through a fine mesh sieve into a bowl and let cool completely.
  2. Mix the blackberry syrup with the club soda.
  3. Place one scoop of vanilla ice cream into a glass. Pour liquor of choice overtop of your ice cream, top with blackberry soda and garnish with rosemary and an additional berry!
