Watermelon Feta Salad & Blueberry Balsamic

The watermelon feta salad has been documented a million and one times before, and for good reason. It’s a fabulously unexpected combination of flavours that simply can’t be beat. Like a party in your mouth, for real! Toss in an unexpected hit of a blueberry balsamic reduction (per my best friend and fabulous chef’s recommendation) and you’ll have a very happy group of diners on your hands. Guaranteed.

Ingredients
  1. Watermelon, cut into 1" cubes (about 4 cups)
  2. Feta, cut into 1" cubes (about 2 cups)
  3. Fresh mint leaves (10-12 - cut or tear them if they're too large)
  4. 1 cup blueberries
  5. 1/2 cup balsamic vinegar
  6. 1 cup water
Instructions
  1. Place the mint, feta and watermelon into a bowl (or if you're feeling fancy and want to impress, create a grid pattern on a serving tray and sprinkle the mint overtop)
  2. In a medium saucepan, add the blueberries and cook over medium heat until juices begin to release. If too dry, add a splash of water.
  3. Next, pour in vinegar and bring to a boil. Cook until liquid is reduced by half
  4. Add water and bring back to a boil, cook for 5 minutes or so, stirring often.
  5. Let cool and then drizzle overtop your salad!
