The watermelon feta salad has been documented a million and one times before, and for good reason. It’s a fabulously unexpected combination of flavours that simply can’t be beat. Like a party in your mouth, for real! Toss in an unexpected hit of a blueberry balsamic reduction (per my best friend and fabulous chef’s recommendation) and you’ll have a very happy group of diners on your hands. Guaranteed.

Watermelon Feta Salad with Blueberry Balsamic

Serves 4
The perfect summer salad. A little sweet, a little savoury, totally delicious
Fresh mint leaves (10-12 - cut or tear them if they're too large)
1 cup blueberries
1/2 cup balsamic vinegar
1 cup water
Instructions
Place the mint, feta and watermelon into a bowl (or if you're feeling fancy and want to impress, create a grid pattern on a serving tray and sprinkle the mint overtop)
In a medium saucepan, add the blueberries and cook over medium heat until juices begin to release. If too dry, add a splash of water.
Next, pour in vinegar and bring to a boil. Cook until liquid is reduced by half
Add water and bring back to a boil, cook for 5 minutes or so, stirring often.
Let cool and then drizzle overtop your salad!
