I happen to be dating someone who values his privacy above anything else, which is a little ironic considering he’s partnered up for life with a blogger. The man doesn’t even know how to use Instagram, if you can believe it. It’s for this very reason that you don’t see him around here often. But today is his birthday. And it only made sense for  me to commemorate such an occasion with a celebratory treat. Introducing: the birthday cake cookie. All of the goodness you love in your old school funfetti cake, but transformed into a delectable little bite of love. I will warn you, these babies are very sweet. But they’re the perfect way to celebrate one of my favourite humans in the entire world.

Ingredients
  1. 1 box (18.25 oz) vanilla cake mix
  2. 1 tsp. baking powder
  3. 2 large eggs
  4. 1/3 cup coconut oil, melted
  5. 1/2 teaspoon vanilla extract
  6. 1/2 cup sprinkles (I used rainbow)
Instructions
  1. Preheat your oven to 350ºF.
  2. In a large bowl, mix together your cake mix and baking powder.
  3. In a small bowl, whisk together the eggs, oil, and vanilla. Pour into your dry mixture and stir until combined. Fold in the sprinkles, making sure not to over-stir (disrupting those pretty colours).
  4. On a parchment lined baking sheet, drop 1" balls of cookies 2-3" apart.
  5. Bake for 9-10 minutes, until just golden. Allow to cool on baking sheet completely before removing.

    YUM! I have what I call my “instagram husband” who begrudgingly takes photos for me, or is the occasional hand model. We always joke when I ask someone to take our photo (as I’m ALWAYS the one taking the photos) “we don’t have any photos of us, can you please take one?” :)

    HI! I just stumbled across your blog recently, and am loving it! I made these cookies this weekend but only had yellow cake mix. Still turned out yummy and they were a huge hit! My new favorite. Thanks for the great post :)
